Alunni Tradizione is reminiscent of the 60-year coffee roaster tradition.
It has long been known that a high proportion of Robusta beans is not a disadvantage. On the contrary, if the roaster, as in this case, knows personally the plantations of his coffees and meticulously selects the green coffees, a very special blend can emerge.
The small but fine quota of high-quality Arabicas comes from Brazil, Kenya, Cuba, Nepal, Peru and Puerto Rico. However, it is the Robusta beans from India that give this blend its strength, expression and body.
These dominate the flavor and aroma profile, but complement each other elegantly. Only the Arabica beans bring the bright, tiny sparks to the deep, dark flavors of Robustas that really shine. On the palate, caramel, malt and chocolate. On the tip of the tongue, citrus.
There is no place for acidity here! Traditional long-duration roasting in the drum toaster minimizes this to an almost imperceptible level.
However, the Alunni Tradizione is much more than just a good pick-me-up: the medium roast brings out a pleasant spice character and fine notes of toasted bread and dark chocolate from the aromatic beans. With its remarkable crema, the coffee is particularly suitable for espresso and latte.
